In nested cv, each run of the inner cv may find a different model (with different optimal hyperparameter values), so the outer cv will test different models. So, how should we interpret the mean score of the outer cv? Which model should we use?

You can consider it an estimate of the value of the score of the expected average model resulting from training procedure.
