Remove matplotlib warning in data exploration notebook

We can probably play with the matplotlib and/or pandas version to remove it.

We don’t have it in the jupyter-book so I assume that we should use the latest pandas version then.

This has been solved in the latest docker image that the user will have.

Wow seriously you changed the docker image ? Now you are in charge in case something goes wrong :wink:
