can someone explain why we are doing this graph?
is it just to see the difference or am i missing something else?

I think they want to show (as stated in the text before the graphs) that the StandardScaler transformer modified the values to be distributed near 0 but not the structure (the shapes) of the distributions. Indeed the graphs look very similar and only differ for the axes scales.
Perhaps that could have been clearer if they did a panel to compare the scatter plots and the histograms
